Stevanović family distillery continues a family tradition of fruit brandies production which is almost a century old. Brandy made from fruits and grapes used to be produced in copper cauldrons and before that in stone cauldrons. Over the years the brandy production has been perfected by using newer, classic cauldrons of higher capacities. Distillery Stevanović produces fruit distillates in a separate facility intended for storing fruits, fermentation, and distillation. For brandy production, we use fruits grown in Smederevo region once they reach full technological maturity. Distillation is performed twice in a copper cauldron with a volume of 250 liters, which meets all the necessary technological characteristics for obtaining quality distillates.
Fruit harvest is an important part of fruit brandy production. Fruits that we process in our distillery are harvested by hand with the aim to remove low-quality fruits that are unsuitable for distillate production. Harvested drupes are crushed immediately and stones are removed so that the fermentation can occur without them. Pomes after harvest are stored in an aging room for two weeks. During aging fruits accumulate the maximum amount of sugar and the aroma of the fruit comes to full expression. Before crushing pomes, petioles and seeds are removed to ensure the highest possible quality of the distillate.
Timely and good distillation is very important for obtaining quality brandy. We dedicate great attention to this phase in our distillery so that all of the crushed fruit is processed immediately after the fermentation. The resulting soft distillate is distilled again with careful separation of the first fraction of the distillate which contains a high percentage of alcohol and the last fraction of the distillate which contains a low percentage of alcohol from the middle fraction in order to obtain the highest quality distillate.
Distillates obtained by double distillation are not immediately suitable for drinking. Fresh or "raw" distillates have a rough burning taste and a pungent smell therefore, some aging (maturation) of the distillate in wooden, glass, or stainless-steel containers are necessary. After many years of aging, the distillates become harmonious, smooth, and softer in taste with a pronounced bouquet.
Stevanović distillery stores the produced distillates in a facility where the annual temperatures vary from 15 to 20 °C and the relative humidity is 70-80%. For long-term aging of plum and wine distillates, wooden barrels made of sessile oak are used. Other distillates use stainless steel containers designed to age distillates.
Plum brandy is produced from the ripe plums of the "Čačanska rodna" variety by double distillation according to a recipe that has been passed down and perfected for generations with many years of aging of the best distillates in oak barrels.
